Meatless Monday Summer Salad

There is plenty of fresh produce in the summer months to get creative with. This delicious looking salad makes my mouth water! The health benefits of cucumbers are unbelievable, here is a short list:


1. Keeps your body hydrated inside and out in the warm weather

2. Flushes out toxins

3. Nourishes the body with vitamins K & C

4. Provides important minerals such as magnesium, potassium, and manganese

5. Aids in weight loss


Chick peas are a power house of protein. You can spice them up or add them plain. Use any type of nut that you have in the house, or of course you can omit them completely, but for me they add a nice crunchy goodness. Get inspired and enjoy!
